It is first de-pulped and then spread out to dry across our three tennis court-sized patios behind the hostel. |
| After being dried twice, the coffee beans are bagged in 150 lb sacks and sent down the mountain on mules, usually in February. We are currently certified by Biolatina Nicaragua. |

Organic coffee is one of our main sources of income.
Our coffee is harvested in October and November.
